Freeze Dried Candy Technology
Candy freeze-drying technology is a technique that uses the principle of lyophilization to remove water from candies, preserving their original shape, color, and taste. This technology is primarily used in the production of freeze-dried candies, such as freeze-dried fruit slices and freeze-dried chocolates.
The process of making freeze-dried candies mainly includes the following steps:
Pretreatment: The raw materials are cleaned, peeled, sliced, etc., and then soaked in syrup or boiled in sugar to allow the candy materials to fully absorb sugar content.
Freezing: The treated candy materials are placed in a low-temperature freezing device to quickly freeze them into a solid state.
Freeze-drying: The frozen candy materials are placed in a freeze-dryer, where, through a low-temperature and vacuum environment, the water within is directly sublimated into a gaseous state, thereby removing the water from the candies.
Packaging: The freeze-dried candies are packaged to maintain their freshness and texture.
